Granola muffins

Mark was gone for a long run which gave me most of the morning to myself.

Start off with a nice, hot cup of coffee.

Then I decided to make this week’s lunch snacks. I tried something new: granola muffins.

To begin, I made the granola

Ingredients:

  • 3 cups of oats
  • 1/3 cup of chopped almonds
  • 2 tbsp on flax seed (not ground)
  • 1/2 cup of honey
  • 1/3 cup of peanut butter
  • 2 tsp cinnamon
  • 1/2 cup of dried fruit (I used cranberries)

Mix all ingredients. Bake at 350F for 10 minutes. Give the pan a little shake, the bake at another 10-12 minutes. Let cool before adding to the “muffin” mixture.

Once the granola is baked, now it’s time for the “muffin” part.

Ingredients:

  • 1/3 cup of peanut butter
  • 1/3 cup of syrup
  • 2 egg whites
  • 2 tsp of pumpkin spice (cinnamon, nutmeg and allspice)

Mix all wet ingredients with an electric mixer.

Add 2 1/2 cups of the granola mix.

Spoon about 1 1/2 tbsp of mixture into muffin tray.

Bake at 250F for 45minutes.

Afterwards, lunch was a great tuna melt that I got from Roni’s GreenLiteBites blog, a piece of feta and olives from last night’s dinner.
