Cinco de Mayo

To celebrate Cinco de Mayo we had enchiladas and guacamole for supper.

Everything was so good – I was stuffed!

For the enchiladas, we used

  • 4 cups of shredded chicken (what was left over from last night)
  • 2 cups of cheese (marble and mozza)
  • 1 cup of sour cream
  • 1 cup of black beans
  • chopped onions for flavour.

Wrapped everything in whole wheat tortilla wraps. Spread salsa and cheese on top, bake at 350F for 45 minutes.
