Mark was busy “saving the world,” as he likes to call it

Jeff was occupying his favourite place on the bed

So what do you when your boys are busy? Bake, of course!

I made granola bars. I normally make a variation of the same type. Today I was inspired to use pureed pumpkin from a recipe I used in Looneyspoons.

Mix all your dry ingredients: 2.5 cups oats; .5 cup of cranberries, sliced almonds, chocolate chips; 1 tsp flax seed, cinnamon; and a pinch of salt

Then mix all your wet ingredients: 1/2 cup honey; 3/4 cup pureed pumpkin; 1/4 cup butter; 1 tsp vanilla
*N.B. make sure your pureed pumpkin is thawed if you keep it in the freezer

Preheat oven to 375F, mix all your ingredients together – wet and dry.

Place evenly in greased pan. Pack down hard with the back of a spoon or your hand. Bake for 25 minutes.

I wrap them in plastic and put them in an air tight container.
